umbriaEvery month Eataly brings its guests closer to a different region of Italy through its food, wine and culture.

Throughout the month of November Eataly will be featuring the region of Umbria with a series of classes focused on wines and traditional dishes from this region.

Cooking with fresh herbs is at the heart of Italian cuisine. In Umbria, they celebrate the pastime of andar per campi, which means not only “walking in the fields,” but also experiencing the surrounding atmosphere and aromas while picking fresh herbs. Fragrant aromatics define the flavor profiles of Umbria’s most popular dishes and bring life to the simplest ingredients.

The Chef of La Scuola will explore how to incorporate fresh herbs into traditional, Umbrian dishes, both savory and sweet. The chef will demonstrate each course step-by-step for you to enjoy. Dishes will be paired with complementary Umbrian wines and class will be complete with adapted recipes and wine tasting notes to take home.
